Purchase:

The fresh pea or pea, is a legume, green-colored pod containing green grains, small and round.

Freshness:

Pea with sheath, must have firm texture, intense green color, not light green. That the touch is full of its grain, not flat. That is not soft (about to germinate or rotten), nor dry or yellow because it is old.

Freshness:

The Pea without sheath (despomegranate) Its grain must be firm (not soft), intense green (not pale green or yellowish) and without sprouts or craters in its grain. Usually this pea is not very fresh, sometimes it is shelled to hide their husk or sheath in bad condition. -There is also pea (dehydrated). (See Pantry products). When you go to buy the product in the supermarket, we recommend:

  • Observe that the display site is clean and adequately refrigerated.
  • Choose the products, preferably in this order: vegetables, fruits, eggs, cheeses and dairy in general, after the products of pantry, but before the meats, poultry, fish and shellfish.
  • When you reach your destination refrigerate, so that the “cold chain” of the same is not interrupted.

Uses:

The pea is used as an ingredient for many strong dishes such as stews, stews and typical soups. -As a garnish, alone or with other vegetables. Au gratin, puréed and in many other preparations. -Your pod is not consumed. -The pea (dehydrated) must be placed in abundant drinking water and at room temperature to hydrate it, from the day before its preparation. Or in boiling water for at least 2 hours before.

Storage:

It can be dehulled (removed from the sheath), portioned in plastic bags and frozen. Or refrigerate with sheath, in plastic bag and absorbent paper (dry) inside and place them in the “vegetable drawer”, or in the front of the refrigerator, not back because it is colder and burn or rot. The duration depends on your freshness at the time of your purchase. -Refrigerated, 10-12 days or more. -Frozen, 1 month or more. Storage: Refrigerate. Freeze. Duration: 10-12 days approx. 1 month aprox. Tips: The peas to freeze, can be packed all in a bag, because they do not stick if they have not been moistened and take out only those that are going to be used. -The cooking time is shortened when frozen. Nutrients and properties: Peas provide fiber, a very important aspect to keep our digestive system healthy, facilitating digestion and combating constipation.
