Green Bean

Purchase:

Green beans or fresh beans, is a legume or legume, green sheath or purple marbled. Its grain is small, oval and of red wine also marbled or beige marbled.

Freshness:

You can see, when the pod containing the beans is firm, with no soft parts, no coffees. Feel that it is full of grain. -The husking, should not have sprouts or be the grain with pale or soft parts. -There are also dried beans (dehydrated) and stored at room temperature. (See Pantry products).

When you go to buy the product in the supermarket, we recommend:

  • Observe that the display site is clean and adequately refrigerated.
  • Choose the products, preferably in this order: vegetables, fruits, eggs, cheeses and dairy in general, after the products of pantry, but before the meats, poultry, fish and shellfish.
  • When you reach your destination refrigerate, so that the “cold chain” of the same is not interrupted.

Uses:

Both fresh and dry beans are used as a strong dish, with meats and garnishes (bananas). -As an ingredient in stews, with rice and meats. -also with other vegetables or alone as garnish.

Storage:

Beans that are still in the pod, refrigerate in closed plastic bag with absorbent paper (dry) inside. They also sell them shelled, usually have less “shelf life” because they are not so fresh. They should be spent soon or frozen well clean and dry. They can be bought in a well-fresh pod, shelled and frozen. Its duration also depends on its freshness at the time of the purchase. -Refrigerated with sheath, 8-10 days. -Refrigerated shelled, 7 days approximately so that no sprouts begin to emerge. -Frozen shelled, 3 months or more.

Conservation:

Cool. Freeze.

8-10 days. Seven days. Three months.

Tips

-Fresh beans to freeze (husked), can be placed in the same bag and remove the portion that is needed, because they do not stick if they have not been moistened. The cooking time is shortened when frozen. -dried or dehydrated beans should be hydrated in clean water and at room temperature from the day before. Or in boiling water at least 2 hours before preparation. There are very efficient pressure cookers in the market (special) in which the beans can be placed without moisturizing (soaking) previously. In common pressure pots, they have to hydrate, otherwise they will never soften!

Nutrients and properties:

-Fresh beans provide fiber, a very important aspect to keep the digestive system healthy that facilitates digestion and combats constipation. -The fiber also helps to reduce the levels of “bad” (LDL) cholesterol. -Beans both fresh and dry (grains) contain lots of nutrients such as protein and iron (red). Note:

-Do not freeze with sheath. -periodically check the condition of the product, its storage and conservation, to be able to consume it in time.
