Which is condensed milk
Condensed milk is cow’s milk that has been extracted from water and added sugar. This is used in desserts of the vast majority of countries such as Colombia, Panama, Peru and Mexico (of the three milks and in rice with milk), Chile (Lemon Pie), Venezuela Quesillo and for hailstorms or rasps. Also in Brazil, Spain, Russia is used a lot in confectionery. It is placed in the coffee Sua Da (Vietnamese), coffee bonbon and cream turned.
Freshness.
It is of thick texture, very sweet taste, creamy white or yellowish. When you go to buy the product at the supermarket you should consider:
- Observe the expiration date of the product or its expiration, which is not covered, altered, or retreaded. Choose the product with date as far as possible.
- Check packaging, which is in optimal condition, not immersed, damaged or beaten. Neither with broken or discarded labels.
- That the gasket is not inflated (blown), because this indicates that the product is already decomposing.
Uses.
Like jelly dressing, “scraped” or frizados, ice cream in general, fruit salads. As an ingredient for the preparation of chocolates (bonbons, truffles), desserts, cakes and confectionery in general.
Storage.
If condensed milk has not been uncovered, it can be stored at room temperature in cool, dry place (pantry or shelves). Once opened, keep it in its packaging if it is plastic or cardboard (Tetra-Pack) and if it is canned, place in container with glass or plastic lid that does not contain bisphenol-A (BPA). Leaving in the can alter their color (it gets grisásea), flavor (to metal) and texture (sandy), ie alter the organoleptic properties of the product. Preferably refrigerate after open, especially in hot and temperate climates (temperatures above 20 degrees Celsius), not only because of the temperature, but also because it attracts insects such as ants and cockroaches. Never leave in the can and less refrigerate it on this.
Duration.
-At room temperature and unopened, up to the (approximate) date of expiration or expiration of the product. -Refrigerated after opening, placing it in a container (preferably plastic) with lid, lasts 1 month or more approximately. It has to be taken into account not to insert the dirty or the fingers or utensils (spoon or spatula) that have been tasted (tasted) any food, since the saliva contains an enzyme (Ptialina) that degrades the food especially the sugars and carbohydrates, damaging So the product. -At the expiration date or expiration of the product, the time can be approximate, because if left carelessly outside the refrigerator and even worse, near sources of heat (stove, sun), can last less. As there are times that lasts longer, depending on the handling of the product and its proper storage.
Conservation.
Cool. At room temperature when not uncovered (pantry), or in climates of temperatures below 20 degrees Celsius. It should not be frozen as it changes the texture of the product and its flavor
Tips.
Delicious Instant Milk candy:-condensed milk can be cooked in the same can (not uncovered) “to the Bain-Marie” (in water that covers it and let it boil.-then put the stove in low and let it boil for 30-40 minutes. -Allow to cool (not to burn) and to uncover. -Refrigerate if desired. This is how to prepare creamy and delicious “dulce de leche”. Important: Although there are times when the date has not expired, it can happen that the container was puffed and the product was damaged and must be disposed of. Other times the date is already expired and the product is still in good condition for a while and can be fully exploited.
